Lemon-Pineapple Ice Pops
A great healthy snack not only just for the kids, but this is a really cool and refreshing dessert for the adults. All you have to do is blend pineapple, coconut milk, lemon juice and zest, and a little honey, then pour the mix into ice pop molds, freeze, and enjoy. The pineapple and coconut combination tastes like a tropical cocktail and the lemon adds a refreshing touch to any dessert.
Avocado-Lime Ice Pops
Similar to the lemon-pineapple pops, you simply add avocado, Greek yogurt, lime juice and zest, honey, and salt to a blender, pour into ice pop molds and freeze. The addition of avocado provides a creamy dose of healthy fat and the yogurt is a great source of protein. Feeling crafty? Add booze of your choosing to make these more festive.

When you are buying lemons, look at the stem end of the lemon. There should be about four or five little lines radiating out of the stem. The greater the number of these lines, the higher the mineral content of the lemon.
